The ingredients needed to cook Sweet Black Sesame & Azuki Paste:
- Use 1 cup Sweet Azuki (Red Bean) Paste
- You need 4 tablespoons Toasted Black Sesame Seeds
- Use 1-2 tablespoons Muscovado (Dark Brown Sugar)
- Use 2 tablespoons Water
Instructions to make Sweet Black Sesame & Azuki Paste:
- You can use canned Sweet Azuki (Red Bean) Paste, but I find it too sweet. If you make it from scratch, see my recipes ‘Tsubu-an’ OR ‘Koshi-an’.
- If you use raw Black Sesame Seeds, toast them using a saucepan for a few minutes or until aromatic. Place the toasted Sesame Seeds in ‘Suribachi (Japanese mortar)’ and grind into smooth paste. Then combine all ingredients well.
- If you use a food grinder or small food processor, process Toasted Black Sesame Seeds with Water and Muscovado. Then you may wish to add Sweet Azuki (Red Bean) Paste and process all together until smooth.
Chefs make the treat by toasting black sesame seeds at a very high heat, then grinding them in a blender with rice and water. Goma (胡麻) in Japanese is black sesame, which is sweet when roasted and blended. You may have heard of the black sesame paste in Japanese stores, a popular flavor in mochi. Chewy, tender sticky rice balls filled with sweet nutty black sesame, steeped in warming ginger tea. I grew up on these black sesame balls and for a long time I thought it was a Thai dessert.
